Italian demonstrative pronouns
Demonstrative pronouns (I pronomi dimostrativi) replace an element in relation to its position in time or space.
They agree on number and gender with the noun they refer to.

Questo is used to indicate elements physically or mentally close to the speaker.

That/Those in Italian
Quello indicates elements far from the speaker, physically or mentally.
Let's analize the following sentences.

|In questa foto, mia sorella è quella con il cappello.||In this picture, my sister is the one with the hat.|
